Aval (Poha) Sweet Mixture



Ingredients

  • Thick Aval (Poha)
  • Badam
  • Cashew Nuts
  • Raisins
  • Ghee-2 tsp
  • Powdered Sugar- As per taste




  •   Heat Oil in a kadai deep enough to immerse a strainer.
  •   Add Aval to the Strainer and dip it into the hot oil. Aval would expand and the sound will stop in couple of seconds. 
  •   Don’t let it change color.
  •  Take it out and place it on a tissue to remove excess oil.
  •   Add ghee in a pan and fry Cashews, Badam and Raisins separately.
  •   In the same ghee, add powdered sugar and stir for 1 minute.
  •   Switch off the stove and add all the fried ingredients including Aval and mix it well.
  •   Sweet Mixture is ready.

Avial- Mix veg in curd gravy


Carrot
Yam/Chenai
Raw Banana
Green Peas
Long Beans
Pumpkin

To Grind

Grated Coconut
Jeera
Green Chilly
Curd

Method

1) Cook all the vegetables with little salt and water. First half cook green peas and yam before adding other vegetables.
2) Grind all the ingredients under To Grind section coarsely without adding water.Add required amount of curd instead of water.Also add little salt if required.
3) Add the ground paste to the cooked vegetables and mix well.
4) Temper mustard seeds and curry leaves in 1 teaspoon coconut oil and add it to the gravy.

Avial is ready to be served.

Payaru upperi-Long Beans Thoran


Long beans
Green chilli
Garlic(crushed)
Shallots or Small Onions(Crushed)
Chilli powder
Mustard seeds

Method

1)Cook Long beans and green chilli together with little salt and water.Keep it aside.
2)Heat oil in a pan and add mustard seeds. once it sputters, add crushed garlic,shallots and chilli powder.
3)Fry for 2mns till the raw smell goes and add the boiled beans.
4)Mix well and serve.

Note
Long beans is broken into pieces of 1 inch long instead of cutting with knife.

Frozen Mix Veg

Veggies that can be frozen

Carrot
Beans
Cauliflower
Corn


Method


Chop all vegetables in required size and store them in ziplock covers in freezer.
You can chop the vegetables in different shapes for different purposes(curry,sabji,kurma,etc). Also you can mix all these and store in a ziplock cover.

This frozen Mix veg comes in handy for use in Vegetable rice, Pulao,Biriyani,Kurma,Upma,etc.

You can use the frozen green peas along with this.

Frozen Peas


This article talks about preparing frozen peas that can be used readily when there is no time for soaking.

Method

Soak peas in required water for 1 night. Drain the soaked in water and add fresh water and soak it for 1 whole day. That is, total soaking time is 24 hrs with change of water after 12 hours.
Now, drain the water and wash it in fresh water once.
Add this drained peas to a Zip lock cover and place it in the freezer.

This can be used readily when required.

Easy Mix Veg Kurma-Goes well with Chappathi,Idiyappam and Rotis


Carrot(Cubed)
Beans(cut into a 1/2 inch pieces)
Soaked Green Peas
Tomato(cubed)
Cauliflower,Potato,Capsicum(optional)
Totally 2 cups

To Grind

Coconut-one cup grated
Onion-1 big sized cut into normal pieces
Spice mix(Elaichi,clove,bay leaves,pepper,saunf,ginger,garlic)-As required
Chilli powder-3 teaspoons
Coriander powder-2 teaspoons
Turmeric powder-1teaspoon
Salt-As required

Method

1)Boil the vegetables with little salt in pressure cooker for 2 whistles.
2)Girnd the things mentioned under To grind with little water to a fine paste.
3)In a kadai, add 2 teaspoon oil and add the ground paste.
4) Saute till the raw smell goes off(approximately 5-10 mns).
5)Now add the boiled vegetables along with the water and mix well.
6)Let it to boil for 5 mns.

This is very easy to prepare and goes well with Idiyappam,Appam and rotis.

Ishtu - Kerala Stew for Idiyappam,Appam


Potato-4
Onion-2
Coconut-1
Ginger-1 inch
Green Chilli-3
Salt-As required
Coconut oil-4 teaspoon
Curry leaves-a fistful


Method

1) Peel and cut Potatoes and onions to square cubes.Split green chillies into two halves.Crush ginger.

2)Boil them in a pressure cooker with a little salt and water for 4 whistles. Potatoes will be cooked till soft.

3)Grate coconut and extract milk out of it(think consistency preferable).

4)Add the coconut milk to the potato mix in the cooker and leave it to boil for 5 mns and switch off.

5)Heat 4 teaspoon coconut oil and add the curry leaves to it. Add this to the curry and serve it.

This goes well with Idiyappam,Appam and Puttu.
